Happy news: My parents are coming home after a 18 month mission for our church. I get to see them next week. I am so excited! :)

Menu Plan Monday: September 28


I am finally posting my menu again! Whew! After being sick almost all week last week I am anxious to get back onto a routine again. It feels so good to be normal again. If you are new to my site, menu planning is a good way to be frugal and keep on top of your grocery budget. Planning helps eliminate spontaneous spending on items you normally wouldn't buy. Plus, it just saves my sanity, really. With 4 kids and always somewhere to go, after school and dinnertime is stressful enough. If I have a plan I am a happier person. Breakfasts:
cold cereal & fruit
oatmeal & berries
pancakes w/homemade syrups
muffins

Dinners:
Cheese filled pasta (this is one of our family favorites now thanks to my bloggy friend Sarah!)
Meatball subs
leftovers

Sides:
salad
rolls
corn on the cob
veggie medleys
rainbow jello

Snacks:
crackers, ham & cheese
smoothies
apples & peanut butter
carrots & celery
oranges

Menu Plan Monday: August 31

I didn't post my menu plan last week. Probably good...I tried several new recipes and many of them we just didn't care for. I am in the mood for some good food. We did love the Potatoes Anna recipe, which we are having again this week! I have lots of good red potatoes from our garden to use.

I have seen some different ways of posting menus. Not just the dinners but he other meals as well. I think I will try that this week. I am trying to eat better. I will also be posting our weekly Family Home Evening Treat.

Also, if I am trying a new recipe I will have a red asterisk (*) by it. Some new recipes I find online, those I will give a link for. Others I won't put online unless I like them first. Join Menu Plan Monday at OrgJunkie today!

Breakfasts:

*banana chip muffins
breakfast burritos
oatmeal


Lunches/Snacks:
whole wheat pita sandwiches
chicken salad sandwiches
fresh fruit
veggie sticks
zucchini bread
pico de gallo w/tortilla chips

FHE treat:
*healthified chocolate chip cookies (these sound delicious. I will post the recipe if I like it).

Dinners:
1. BBQ, *classic potato salad & fruit
2. * Chicken Tortilla Chip Casserole & salad
3.Frito Dinner & corn
4. *Crockpot Chicken Italiano & Potatoes Anna, green beans from the garden
5. Our 11th Anniversary!!!! Quesadillas for the kids.

Menu Plan Monday: August 17


Why is it so hard for me to plan menus in the summertime? Who knows. The lack of a schedule I suppose. In any case, we started school here last week (my kids are in year-round) so hurray for schedules again! I am in the works of planning my menus for 60 days. Maybe I am crazy. I would like to think it will save me in the end. We'll see! I will keep you posted.

Also, all of my menus planned for this week are from my food storage! The only things I need to buy are perishables. Everything else I have stocked. It's a great feeling! I also still have some meals in the freezer, some half eaten some not, so I will incorporate that into my week. Join Menu Plan Monday over at OrgJunkie today!

MONDAY: Grilled red potatoes (from our garden) & black bean and corn dip

TUESDAY: BBQ Cheddar Chicken Rolls ups (use up all that free BBQ sauce!)

Menu Plan Monday: June 29


Last week's menu went really well. It's another reminder to me that when I have a plan life is less stressful! The BBQ chicken roll up recipe we tried was SO yummy....it is now on my regular rotation list. The egg stratta was really quite gross...so I won't bother posting THAT recipe. :) I will come back later and post link to some recipes, I am having internet issues.

MONDAY: Frozen lasagna

TUESDAY: Fiesta Chicken Enchiladas, veggies

WEDNESDAY: Ham and cheese braid

THURSDAY: Taco Salad & mini cheese dog wraps

FRIDAY: Maui burgers and hot dogs on the grill, fruit and veggies

SATURDAY: Spaghetti and breadsticks, salad

SUNDAY: Grilled Cheese and soup (easy!)

Menu Plan Monday: June 22

I am finally getting back to planning menus. For a few weeks after having my baby I didn't have to worry about meals since I had put some in the freezer and people from church brought me meals for a week straight! I have good people around me. :)

This week I have company coming so I have planned food more in detail than usual (all three meals). I love all the summer foods! Some of these recipes I have not posted yet on my recipe blog so I can't link to them but I will soon.

MONDAY: Pepperoni Pull Apart Pizza, Rainbow Jello, veggie sticks

TUESDAY: Chili (or bean) and Rice Wraps

WEDNESDAY: Fabulous Fettuccine, salad

THURSDAY: Mexican Chicken and Rice, corn, angel food cake roll for dessert

FRIDAY: Egg Stratta (for breakfast), BBQ and Mexican layer dip for dinner

SATURDAY: BBQ cheddar chicken roll ups, my all-time favorite fruit pizza

SUNDAY: Corned Beef Casserole, salad

Menu Plan Monday: May 4


I haven't formally planned my menus the past 2 weeks. My life has been so crazy! We have just had what's in the freezer or quick meals like quesadillas. One of my goals is to get freezer meals done before my baby is born in the next few weeks so if you have any good freezer meals to share, PLEASE do!

Another change we have made the past few months since I have picky eaters in my house, is that we only have dessert once a week. That has helped a lot! (For my benefit also!)

Menu Plan Monday: April 13

This week I will only be around for 3 dinners! I am taking a trip to see a friend for three days...no kids! I have such a great hubby. :) My dear friend and I get together at least once a year for girl time. I am planning the meals for him while he is gone however...makes things easier. I only have 6 weeks until my baby comes (or sooner, I guess you never know) so this will be a nice trip for me. Anyway....here are my plans for the week:

MONDAY: TBD

TUESDAY: Mexican Manicotti (I never got to this one last week)

WEDNESDAY: Tacos & veggies (dinner with family visiting)

THURSDAY: Homemade Pizza, carrot sticks

FRIDAY: Breakfast for dinner!

SATURDAY: Ravioli, hot dogs/sausages on the grill, smoothies

SUNDAY: TBD

Menu Plan Monday: April 6

It seems that every week something disrupts my menu plan....which isn't too big of a deal because I have so much stuff in my freezers that I can adapt. I wasn't feeling too well and was so tired one day last week (I am 33 weeks pregnant after all) so instead of sticking to my menu plan I pulled out some frozen chicken I had cooked in an Italian sauce a few months ago. I thawed it, whipped up some rice, opened a can of corn and we were good to go! The next few days here are supposed to be around 70 degrees, so we are starting up the grill! Yay!

Last week I had a couple of days where my meals had to be changed, so I just put them on the menu for this week! Easy. I'm not in the mood at the moment to plan side dishes or veggies...I will just throw in what I am in the mood for!

TUESDAY: Baked Potato Bar

WEDNESDAY: April Fools Dinner! A mix of this and this, & drinks with straws that are really jello! My kids will love it!

FRIDAY: Four Pasta Beef Bake

SUNDAY: Leftovers smorgasbord
