Frugal Living Friday: Green Tomatoes

Now that fall is here, are you left with lots of green tomatoes? Don't throw them out. There are many things you can do with green tomatoes.

If you don't want to make anything with your green tomatoes that's okay! Did you know you can get them to ripen after you pick them? It's true!

Just pick all your green tomatoes before frost hits. Put them in a cardboard box in the garage. Wait a few weeks and they will ripen into red tomatoes. I do this every year and it's my favorite thing to do with my green tomatoes. It stretches my fresh tomatoes from the garden even farther into the year.

You are a saint, as I think I have already told you. My hubby was just telling me I needed to find something to do with all the green tomatoes. I can't wait to try all of these ideas, including the box! Thanks a million.

Those are such great recipes, but you really have to post this green tomato pie one! It's great!!!


double pie crusts...premade or homemade
1/2 raisins.....or if you don't like raisins do 1/2 cup brown
sugar.
1 lb green tomatoes or green tomatillos
1/2 cup granulated sugar... Read More
2 tbls all-purpose flour
1 1/2 tsp. salt
1 1/2 tsp. cinnamon
1/2 cup lemon juice
2 Tbls. Butter

~~Preheat oven to 375 F~~
1) combine raisins in enough hot water to cover them by 2 inches. Let them plump up. You can leave them whole or cut up. I prefer cut.
2) Fit 1 of the pie pastries into a 9 in. pie plate
3) Slice green tomatoes and cut slices in half.
4) Combine sugar,flour,salt, and cinnamon in a large saucepan and mix well. Add tomatoes and coat well
5) Drain raisins (chop if you want to) and stir the raisins and the lemon juice into the tomato mixture.
6) Bring tomato mixture just to a boil over medium heat, stirring frequently. Turn heat down and let thicken a little. When it thickens take off heat.
7) break the 2 tbls of butter into the pie plate, add the tomato mixture and add the top pastry and seal the edges. make cutouts on top and bake until the crust is golden brown, about 35 minute. Remove and cool.

Enjoy topped with whip cream or ice cream!! Yummy!!

Gosh darn it, those things look delicious. Somehow it looks more appetizing than the normal tomatoes! And this green tomato recipe is a keeper, good one. I'm trying it out.
