Thrifty Thursday Tip

Do you have some overripe bananas and are tired of making banana bread? Don't throw the bananas out! Here is a yummy recipe for banana brownies...they are divine! It's a perfect way to use up overripe bananas.

Banana Brownies

3/4 cup butter (soft)
2/3 cup sugar
2/3 cup brown sugar
1 egg
1 tsp vanilla
2 ripe bananas (mashed)
2 cups flour
2 tsp baking powder
1/2 tsp salt
chocolate chips (I did about 1/4 of a bag or a little more)

Mix everything together, put in a 9x13 pan and bake at 350 degrees for 25 minutes. Let cool and enjoy (don't overbake -- they look a bit "undone" sometimes).

I also use overripe bananas in smoothies. How do you use overripe bananas?

Genius!! I have 3 that are maybe still on the top of my garbage. ha ha. The thought of banana bread or banana bars was too much but these sound delish!

Is this for a 13X9 pan? Thanks for the new idea; I too get tired of banana bread because we only like bananas when they are slightly green/barely yellow, so we have alot that never get eaten!

What a great idea... I'm going to try it today. Sometimes I make my banana bread with chocolate chips mixed in... and sometimes I make it with craisins. I also like to make banana/oatmeal/raisin cookies.

You can stick ripe bananas in the freezer. They turn black, but they are still ok to use. Simply let them thaw on a plate and peel them. They are very soft and easy to use. They mash easier too.

I always have a big stash of frozen bananas on hand. I prefer to peel them first then throw them into a ziploc bag. They do stick together a little but you can easily pull them apart to get out the number you need. I use a frozen banana to replace icecream and crushed ice in smoothies because the consistency is perfect! Freezing bananas is also thrifty because I buy red banded bananas (reduced to $.25/lb for being overripe) at the store and can easily stash them in the freezer until I'm ready for Banana brownies!

My favorite recipe is for banana oat muffins found on allrecipes.com. I make them all the time--easier (for me) than banana bread and quicker too. If I make mini muffins my kids eat them like cookies!
